Etouffe is a traditional Cajun or Creole dish made popular in New Orleans and other areas throughout Southern Louisiana. This dish typically consists of a thick, well-seasoned seafood stew served over steamed rice. This dish was first introduced in Louisiana around the 1950s using crawfish, though today it can be made with whatever type of seafood you enjoy. Fiesta Brand Salt-Free Etouffe Seasoning makes it easy for you to enjoy the traditional Creole-style flavors of Etouffe right in the comfort of your own home. Simply sauté 1 lbs. peeled shrimp in hot butter and stir in the contents of the seasoning package with 1 cup water. Let the mixture simmer until thick and serve over a bed of freshly steamed rice or cooked pasta.

DIRECTIONS: Melt 1 stick of butter in a large skillet. Add 1 lb. Peeled deveined shrimp (approx. 3 lbs. unpeeled shrimp) OR 1 lb. thawed crawfish tails. Sauté until heated thoroughly; add 1 cup water, 1 package (½ jar)River Road Etouffee Seasoning, ½ cup chopped green onions, and 1 Tbs Lemon juice. Cook covered until mixture thickens slightly and serve over rice or pasta. (Optional ingredient: 1 Tbs Brandy).
